Air Fryer Sirloin Steak with Garlic Butter (Ninja Dual Zone)

Sirloin steaks cooked in an air fryer sound dodgy, but they're genuinely brilliant, especially when you slather them in garlic butter and let the Ninja Dual Zone do the work. Well-done or medium-rare, it's all down to timing, and the whole thing comes together faster than you'd expect.

AIR FRYER STEAK RECIPE! YOU NEED TO TRY!! Ninja Dual Zone

Source video by Sohbia on YouTube. This recipe was adapted with strict source-fidelity rules.

A quick and flavoursome air fryer sirloin steak recipe from Sohbia, made in the Ninja Dual Zone. The steaks are slathered in a simple garlic and butter rub, then air fried at 200°C until cooked to your liking. Served on a bed of buttery mashed potato with steamed broccoli on the side, it is an easy weeknight dinner with minimal mess. The cook quoted timings are for well done steaks, so reduce by a minute or two for medium or medium rare.

Ingredients

Steak
  • 2 steakssirloin steaks, patted dry
  • salt
  • black pepper, freshly ground
Garlic butter
  • 50 gbutter, softened
  • 3 clovesgarlic cloves, minced or pressed
  • salt
  • black pepper
Mash
  • 500 gwhite potatoes, peeled, rinsed and quartered
  • butter (add late)
  • milk (add late)
  • salt (add late)
  • black pepper (add late)
To serve
  • broccoli, steamed

Method

  1. Peel and rinse the potatoes, then cut them into quarters. Place into a saucepan, cover with boiling water, and boil on the hob for around 10 minutes until tender.

    ~10 min
  2. Make the garlic butter: on a small chopping board, combine the softened butter with the minced garlic, then season with salt and pepper. Mix well and set aside.

    ~3 min
  3. Pat the sirloin steaks dry on both sides with kitchen towel to remove excess moisture. Spread the garlic butter generously over one side of each steak.

    ~2 min
  4. Preheat the air fryer to 200°C for 5 minutes.

    ~5 min
  5. Place the steaks into the hot air fryer basket butter side down. Spread more garlic butter on the top side and season with a little extra salt and pepper.

    ~1 min
  6. Air fry at 200°C for 10 minutes for well done, turning the steaks over after about 5 minutes. Reduce the total time by 1-2 minutes for medium or medium rare.

    ~10 min
  7. Once the potatoes are tender, drain them and return to the pan. Add a little butter, some milk and season with salt and pepper. Mash until smooth and creamy.

    ~3 min
  8. To serve, spread the mash onto a platter and use a fork to give it some texture. Place the steaks on top and serve with steamed broccoli on the side.

    ~2 min

Frequently asked

Do I need to preheat my air fryer for steak?
Yes, preheating is recommended for this recipe. A hot basket helps to sear the outside of the steak from the moment it goes in, giving you better colour and flavour. Sohbia preheats the Ninja Dual Zone at 200°C for 5 minutes before adding the steaks.
How do I cook the steak to medium or medium rare instead of well done?
The 10 minute cook time at 200°C in this recipe gives a well done finish. For medium, reduce the total cook time by around 2 minutes. For medium rare, reduce by 3-4 minutes. Always check with a meat thermometer if you can: around 57°C for medium rare, 63°C for medium, 71°C and above for well done.
Should I let the steak rest after cooking?
Yes, although it is not mentioned in the video it is good practice to rest the steak for 3-5 minutes after removing it from the air fryer. This lets the juices redistribute so the steak stays tender and juicy when you cut into it.
Can I use other cuts of steak in the air fryer?
Yes. Ribeye, rump and fillet all work well using the same method. Thinner cuts will need less time, and very thick cuts (over 3cm) may need an extra minute or two. Adjust based on thickness and how you like your steak cooked.
Will the garlic butter burn at 200°C?
A small amount of garlic butter pressed onto the surface of the steak will mostly melt into the meat and baste it as it cooks. If you are worried, you can add the garlic butter only on the second side after turning, so the garlic spends less time in the basket.
